  • 6 oz ripe cherry tomatoes (1.5 cups)
  • 1 large yellow onion (12 oz), chopped
  • 3 garlic cloves, chopped
  • 1 tsp grated fresh ginger
  • 1 cup frozen peas

Directions

  1. Set a large plate next to the stove.
  2. In a 12-inch skillet over medium-high heat, cook snow peas until blistered. Transfer.
  3. Sear tomatoes in oil until blackened, about 2 minutes.
  4. Cook onion, garlic, and spices, then blend cashews and boiling water to form a smooth paste.
  5. Stir everything together and simmer for 2 more minutes.
